Egg Free Waffles

Breakfast foods are the most challenging in our home. Unless it is cereal or toast, it most likely has some kind of egg involved. The egg substitues that I have failed me when trying to make a birthday cake, so I didn't really have any hope for breakfast foods working out. Easter morning prompted me to give waffles a try. They were fantastic!

Egg Free Waffles
3 Tablespoons Water
3 Tablespoons Oil
2 Teaspoons Baking Powder
2 Cups All-Purpose Flour
1/2 Cup Melted Butter
1 3/4 Cups Milk
2 Tablespoons Brown Sugar
4 Teaspoons Baking Powder
1/4 Teaspoon Salt

Heat Waffle Iron. Beat egg substitute (3 Tablespoons Water, 3 Tablespoons Oil & 2 Teaspoons Baking Powder). Beat in remaining ingredients just until smooth. Bake in waffle iron about 5 minutes or until the steam stops. *I added diced strawberries.


Interestingly enough, I went to all this trouble, and Timmy didn't even try them. He flat out refused...he didn't eat anything until lunch that day. He's stubborn!

That's weird. What kind of egg substitute were you using? My grandparents, and for a while my mom, used EggBeaters substitute. (You know, back during all of the Eat-An-Egg-Clog-An-Artery advertising.)

I think a 1/4 cup equaled 1 egg. We used to use them all the time, even in cakes and cookies, and they turned out OK. I have never tried another kind, though.

My son is allergic to eggs, so i can't use any of the egg subsitutes you find in the grocery stores - they are all egg whites. The substitutes i have are from a food allergy website.

Hi Chrissy ~

Several years ago, during one of my pregnancies, I developed an allergy to eggs. Baked goods without eggs are a challenge to find, especially birthday cake! I did run across a recipe for a chocolate cake that uses no eggs at all. Thought you might like the recipe - it's a really good cake (very similar to brownies, very moist...):

3/4 c. oil
3 c. flour
6 T. cocoa
2 tsp. vanilla
2 c. sugar
2 tsp. baking soda
1 tsp. salt
2 T. vinegar
2 c. cold water

You just mix it all together, pour into a greased 9 x 13 inch pan and bake for 45 minutes at 350 degrees. Once completely cooled I usually just sprinkle powered sugar over the top, but you could frost it instead.

Oh wow. I never would have thought that the egg substitutes had egg stuff in them. I guess that was just for people who were worried about their cholesterol. That has to be so hard for you!!
